I feel inspired to dance by the light of the full moon, or the light of the gibbous moon (almost full) this evening—on the beach! Some kind of spice has gotten into me, after working almost 30 hours over the last two days—perhaps it is due to these spicy crackers. I had never before attempted to make my own crackers, but the Sourdough Surprises challenge got me curious. So I decided to make a cracker that I usually keep quiet in the guilty pleasures file, the one I love but try not to buy and when a box is there in front of me I try not to eat the whole thing in one sitting—what cracker other than Cheez-Its? Oh, you too? Well, now you can make your own.
Sourdough Spicy Cheddar Crackers
Inspired by Kath Dedon
1 cup shredded cheddar cheese (Tillamook Cheese if you can!)
½ cup butter softened and cut into pieces
1 ½ cup flour
1 tsp. salt
1 tsp red pepper flakes
¼ cup sourdough starter
1 tsp. heavy cream
Preheat oven to 350 degrees F.
Place shredded cheddar cheese, butter, flour, salt and crushed red pepper flakes in a food processor. Pulse until the dough turns into coarse crumbs.
Add sourdough starter and heavy cream and process until dough forms into a ball. Push crumbles into a dough ball and let rest, covered for 30 minutes.
Roll dough out onto a floured surface. Roll until dough reaches about 1/8″ thickness.
With a pizza cutter or knife, cut dough as you like. Use flat end of a wooden skewer to poke a hole in center of shapes. Place crackers on a greased baking sheet, at least 1/4″ apart from one another.
Bake 12-15 minutes or until edges just start to brown. Enjoy!
So good! Can’t believe all the tasty things that sourdough can do! Here is an attempt at taking a picture at night of the moonlight on the Atlantic Ocean on Neptune Beach. Got sand in my Danksos, and it was tickling my toes all day long.
What a great idea to use the sourdough starter! They look terrific! 🙂
Thank you, and thank you doubly for the inspiration! They are crave-worthy
Yum! Cheddar and pepper, nice combo. They look so rich and tasty!
They look fantastic! Do you have a dairy free cracker in your repertoire?
You could see what happens with soy…. ?
One of the things I miss the most since learning of my son’s dairy allergy is Cheez-Its – and these look like the perfect substitution. I may have to find an excuse to make these, like, for a friend or something, just to be able to try them! Great job!
Thanks! And, confession, almost all the treats I bake are for “friends” 🙂
Delicious! What an excellent cracker to have in your repertoire! They look like they turned out perfectly!
So, so good! I even burnt the first batch and even they tasted great. Cheese is a forgiver. Love what’s going on over at your blog as well! Glad to get to peek into the sourdough blog community!
They look yummy! Cheddar and pepper – yum!
They look delicious (I love spicy food!) Nice job!
Thank you!
These crachers looks yummy…..easy to make as well. Will try this soon.
Hope you do and let me know if you have success!
I’m in the Cheez-It fan club too. Nice to able to make them, though not eating the whole batch is always a problem!
This recipe is a fairly small batch 🙂 Not too heavy on the guilt.
Cheese and pepper, yum! Very tempting.
I know! Tillamook cheese is the key
